You shouldn't see it as her looking to get rid of you. You said that she was having a bad day and she had just come back from vacation, so maybe it's just a pet-peeve that she doesn't have people for Sundays and not really you asking for your weekends off. It was probably the shock of coming back on a Sunday and seeing that she was short-handed on workers that put her in a bad mood. I've seen that with my boss that if there aren't a lot of people for a shift, then it feels like you're stretching and straining everything you've got, but that also means that it's more of a chance for somebody to get experience and like you said, you're one of the people that've been there the longest, so you have the most experience (which is really good as it's hard to train people ~A~ And you've said that yourself, that good help is hard to find).
You're always working your hardest at what you do, so no matter what, if that shines through with what you're doing, then there's no way that she could let go of such a great help. And if she does hire somebody that can help with Sundays and other days, she may have you to train that person, so that might be something of a few added hours~
